Top Nogs - Holiday Cheer

Time to embrace the yuletide cheer and raise a glass to hot toddies by the fireplace.Here's a few recipes for holiday cheer. Enjoy.

 

The Hot Apple Pie
1/2 ounce rum (use spiced rum if possible)
1 1/2 ounces Calvados (French apple brandy)
4 ounces apple juice
1 1/2 ounces fresh lemon juice
1 slice of lemon (for garnish)
1 cinnamon stick (for garnish)

Warm gently all liquids in a saucepan (do not boil). Pour into a mug. Garnish with lemon. Use cinnamon stick as a stir-stick. Serve warm.

 
Vanilla Bean White Hot Chocolate with Rum

1 vanilla bean
3 cinnamon sticks
1 tsp whole cardamom, lightly crushed
4 cups milk
4 oz. white chocolate
Rum
Whipped cream for garnish

Cut the vanilla bean in half lengthwise and scrape out the seeds.
Place the seeds, bean, cinnamon, cardamom and milk in a medium saucepan. Bring to a boil, remove from heat. Let the spices infuse the milk for 20 minutes. Strain and remove the spices. Heat the milk again, add chocolate and desired amount of rum and stir until the chocolate has melted. Pour into mug, top with whipped cream.
