August in Edmonton is delicious. All the lovely fruit arrives from the Okanagan. During my Saturday trip to the City Market, I purchased so many juicy peaches. Inspired by the newest cookbook on my bookshelf, BabyCakes, I used this recipe to make ginger peach cornmeal muffins. I topped each muffin off with a raspberry for more flavour and colour. To stock my pantry with the required ingredients, I had to visit Planet Organic and enlist the help of a friendly employee to guide me to right ingredients.
The tasty muffins are worth the effort. They are gluten-free, sugar-free and vegan – and rather delicious.
