Merry Eats: Baked Quinoa

1 tsp olive oil
1 clove garlic, minced
¼ cup minced onion
½ cup diced red bell pepper
¼ cup diced celery
1 cup dry quinoa
2 cups sodium-reduced chicken stock

  1. Preheat oven to 400°F.
  2. In an oven safe skillet, heat olive oil over medium heat.
  3. Sauté garlic and onions until transparent, about 3-4 minutes.
  4. Add diced pepper and celery, cook for another minute.
  5. Stir in quinoa and mix to coat with vegetables and oil.
  6. Pour stock over all and bring to a boil, stirring constantly.
  7. Cover with lid or foil and transfer to preheated oven.
  8. Bake 20-25 minutes or until liquid is absorbed and grain is tender.
  9. Fluff with fork before serving.

Makes 4 servings.
