A small sampling of the menus on showcase: Hardware Grill features a split pea soup, ancho-chili rubbed flat iron steak and a sweet finish with 12 year old Glenlivet butterscotch pudding. The Marc is offering a $25 menu serving pork rillettes, mousseline of Arctic char and your choice of dessert. The newly opened Niche Restaurant is serving two menus of home-style Alberta cooking: a 3-course delight for $25 or a 5-course exclusive menu for $50. Dishes to choose from include bison short ribs, wild boar prosciutto salad or confit of Brome Lake Duck.
