One of our favourite stops at the City Market throughout the summer was at Prairie Mill Bread Co.’s stand. The owner, Owen Petersen, has an infectious passion for baking bread that surprisingly makes you more excited about eating it. We had to stop by Prairie Mill Bread Co.’s south side store to see what kind of hard work and love goes into every loaf.
When you get out of your car in the parking lot, you can already smell fresh bread! The bakery is a relatively small operation that pumps out really impressive amounts of whole grain baked goods. We toured around the bakery, seeing all the goodies we could buy, the large table tops where it’s all made, the stone mill, and the huge oven with bread loaves on shelves rotating around in what we thought of as a giant-size rotisserie. Simple, yet impressive. Kind of like their breads.
While most bakeries buy their flour, Prairie Mill has a coveted stone mill that grinds whole wheat into coarse, nutrient rich flour right before they add it to the recipe. The entire grain is used in Prairie Mill’s products, so their bread is extra healthy and hearty. Not only do they have the store and the City Market booth (yes, they’re inside City Hall for the Winter, too!), they also have a large wholesale side to the business, providing bread to all of the organic stores in Edmonton. Every morning, they’re busy long before sunrise baking 250-300 loaves on weekdays and upping the ante to over 600 for their weekends in the store and at the market.
They have more than whole wheat breads – they have daily specials like jalepeno cheddar bread, sourdoughs, banana breads and those yummy cinnamon buns! Plus, you can pick up some locally made jams and honey to go with them. Stop by the bakery, sample some of the baked goods, and get excited to eat bread!
