Mirepoix is a trio of creative chefs that are taking over kitchens around the city to host tasty pop up dinners. Bonus: These fun monthly dinners happen to be completely vegan!
Occurring monthly, Mirepoix takes over a restaurant space on an evening they are usually closed. You can expect a four or five course meal that fits the space they're taking over. Past pop ups have been held at Accent, The Common, and Upper Crust to name a few. The meals cover a wide range of themes including brunch, European market fare, summery, and spicy.
The Vegan Aspect
Intrigued? You should be. Shying away? No need! These meals will satisfy the pickiest of omnivores. The three talented chefs have been cooking for omnivores for years, and they aren't interested in pushing a vegan lifestyle on you. You won't find fake meat in heavy sauces at these pop ups. Vegans can take comfort knowing every detail of the meal (including the drinks) are 100% vegan. Interestingly, the majority of Mirepoix's guests aren't vegan!
The Next Pop Up
This Sunday (March 16), there are two seatings for a tapas night held at The Clever Rabbit (6pm or 9pm). Tickets are $45 and you can reserve one of the few remaining spots by calling (780) 293-0252.
Mirepoix is made up of Rylan, Adam and Jade, three vegans with differing paths to becoming full-time chefs. Their shared passion for perfecting vegan recipes and experimenting with food that everyone will love brought Mirepoix to life. After over a year in the making, they hosted their first pop up in August of last year. The name Mirepoix is borrowed from an old French culinary term referring to onion, carrot, and celery - the basis of a lot of French meals. And what do you know, these three ingredients are vegan!
